Ingredients

The ingredients are:
  • 2 cups sifted all-purpose flour
  • 1 cup butter
  • 1 cup brown sugar, firmly packed
  • 1 cup granulated sugar
  • 1 tablespoon molasses
  • 2 cups coconut
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 tablespoons coconut (or dark rum, optional, but using it sure does add to great taste)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup rolled oats

How to Make

  • Step 1: Preheat oven to 375-degrees F.

  • Step 2: Cream together the butter, adding sugar slowly and beating until light and fluffy.

  • Step 3: Add eggs, beating well after each addition, then vanilla and rum, if using.

  • Step 4: Sift together flour, baking soda, baking powder, and salt.

  • Step 5: Slowly add dry ingredients. Stir in oatmeal and coconut flakes.

  • Step 6: Drop by large teaspoonfuls onto ungreased baking sheets.

  • Step 7: Bake for 12 to 15 minutes, or until golden. Remove onto wire racks to cool.
