Step 1: Preheat oven to 375-degrees F.
Step 2: Cream together the butter, adding sugar slowly and beating until light and fluffy.
Step 3: Add eggs, beating well after each addition, then vanilla and rum, if using.
Step 4: Sift together flour, baking soda, baking powder, and salt.
Step 5: Slowly add dry ingredients. Stir in oatmeal and coconut flakes.
Step 6: Drop by large teaspoonfuls onto ungreased baking sheets.
Step 7: Bake for 12 to 15 minutes, or until golden. Remove onto wire racks to cool.
