Ingredients

The ingredients are:
  • 500 gram ground turkey (mince)
  • 45 grams bacon (fatty, finely diced, 3 rashers fatty )
  • 175 grams mixed vegetables (fresh, finely chopped, 1 cup onion, carrot, leek, celery)
  • 120 gram garlic clove, fresh minced ( 8 cloves garlic )
  • 2 tablespoon olive oil
  • 250 ml red wine (1 cup )
  • 125 ml milk (½ cup )
  • 1 tin (400 grams) tomatoes (whole peeled tomatoes)
  • Brown sugar, good pinch
  • Sea salt flakes and freshly-milled black pepper
  • 400 grams dry fettucine pasta
  • Parmesan cheese and basil leaves to serve

How to Make

  • Step 1: Saute the bacon, vegetables and garlic in the olive oil using a large pot over a medium heat for 5 minutes or until just softened.

  • Step 2: Add the turkey mince and turn up the heat to high & continue cooking whisking well to break up the meat.

  • Step 3: When the meat is all cooked and the juices have nearly all evaporated, add the wine ; cook for 1 minute, then add the milk, tomatoes and sugar. Simmer for 30 minutes, until tender and rich, then season with salt and pepper.

  • Step 4: Cook the fettucine pasta in a large pot of rapidly boiling salted water until al dente.

  • Step 5: Drain well then toss through the sauce.

  • Step 6: Serve with a generous amount of grated parmesan and chopped basil.
