Ingredients

The ingredients are:
  • 3 tablespoons butter
  • 2 tablespoons pesto (garlic scape pesto)
  • 1/2 cup white wine
  • 1 lemon, zested and juiced (about ¼ cup or 2 ounces of juice and 1 Tablespoon of fresh zest)
  • 1 1/2 to 2 pounds shrimp (raw with shells and tails removed)
  • 1/2 cup to 1 cup parsley, chopped
  • 2 teaspoons capers
  • 1/2 pound dry spaghetti pasta (noodles)
  • 2 tablespoons parmesan cheese (to serve)

How to Make

  • Step 1: Cook the pasta.

  • Step 2: Meanwhile, in a large skillet over medium heat, melt butter.

  • Step 3: Stir in garlic scape pesto, wine, lemon zest and juice until mixed. Bring to a simmer.

  • Step 4: Add shrimp and stir to coat with sauce.

  • Step 5: Cook for 3-5 minutes, stirring once or twice, until shrimp is opaque and cooked through.

  • Step 6: (If using cooked shrimp, just add them to warm up as you continue.)

  • Step 7: Add parsley, capers and hot cooked noodles to the skillet. Toss everything together to coat the noodles.

  • Step 8: Add salt and pepper to taste.

  • Step 9: Sprinkle with parmesan to serve.
