Step 1: In a mixing bowl, combine the eggs, sugar and onion. Add the flour and cornmeal and stir until well combined.
Step 2: Heat 2-3 inches of oil in a heavy saucepan. Oil should be hot (about 365 f or 165 C). Drop batter by rounded tablespoon into the oil and fry until they're golden brown. Remove from oil with a slotted spoon and onto a paper-towel lined dish. Let drain for a moment and serve hot.
