Ingredients

The ingredients are:
  • 2 pounds eggplant (about 2 eggplants)
  • 4 tablespoons tahini
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil (extra virgin)
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 2 cloves garlic, chopped (large cloves)
  • 240 grams pita breads (4 pita)

How to Make

  • Step 1: Pre-heat oven 400F

  • Step 2: Place the eggplants on a lined baking sheet, stabbed several times with a knife

  • Step 3: Place in pre-heated oven and cook for 45 minutes or until they are soft

  • Step 4: Cool for 15 minutes or until they are easy to handle

  • Step 5: Cut the eggplants into pieces that will fit in your food processor

  • Step 6: Add all the remaining ingredients. Blend until smooth

  • Step 7: Warm the Pita Bread and tear into pieces. Serve & enjoy
