Ingredients

The ingredients are:
  • 2 large eggs, beaten
  • 1/2 cup milk (whole or 2%)
  • 1/2 teaspoon vanilla extract (real)
  • 1/4 plus unsalted butter (melted then cooled)
  • 1/8 cups unsalted butter (melted then cooled)
  • 1/2 cup cornmeal (yellow)
  • 1 cup all-purpose flour
  • 3/4 cup sugar (white)
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon salt

How to Make

  • Step 1: Preheat the oven to 350F.

  • Step 2: Place it all in a stand mixer with a paddle attachment.

  • Step 3: Mix until smooth ( don't over mix).

  • Step 4: Pour into 6 prepared muffin paper cups, in a muffin pan.

  • Step 5: Bake for approx 30 minutes or until golden brown and the top springs back when touched.

  • Step 6: Let cool in the muffin pan ( on the wire rack) for 15 minutes, then remove the muffins and cool completely.
