Ingredients

The ingredients are:
  • 2 ounces margarine (50 gram)
  • 2 tablespoons golden syrup (level)
  • 1 ounce light brown sugar
  • 4 ounces plain flour
  • 1 teaspoon bicarbonate of soda (level)
  • 1/2 to 1 teaspoon mixed spice (each freshly ground cinnamon and freshly grated ginger)

How to Make

  • Step 1: Pre-heat oven to 400 F

  • Step 2: Grease baking trays

  • Step 3: Melt margarine with syrup in saucepan and set aside

  • Step 4: Add the sugar and mix

  • Step 5: Sift the flour with the bicarbonate of soda and the spices and mix well and mix in well to the mixture in the saucepan

  • Step 6: Allow mixture to stand and cool for about 15 minutes

  • Step 7: Roll into small balls (about 12)

  • Step 8: Place on baking trays

  • Step 9: Flatten a little

  • Step 10: Cook for 5 minutes at 400 F

  • Step 11: Reduce heat to 350 F and continue cooking for another 7-10 minutes

  • Step 12: Remove to cool on wire tray
