Ingredients

The ingredients are:
  • 250 grams spinach, frozen and defrosted and excess liquid drained
  • 100 grams feta, crumbled
  • 100 grams mozzarella, 1 cup coarsely grated
  • 1 green shallot, trimmed and thinly sliced
  • 2 tablespoons mint leaves, fresh and finely chopped
  • 280 grams sheets filo pastry (9 sheets specified)
  • 70 grams butter, melted
  • Greek-style yoghurt, to serve
  • Lemon wedges, to serve

How to Make

  • Step 1: Place the spinach, feta, mozzarella, shallot and mint in a large bowl and combine well.

  • Step 2: Place a sheet of filo on a clean, dry work surface and brush with melted butter and then place another sheet of filo on top and brush with butter then repeat to make 6 layers in total and useing a sharp knife to cut the pastry in half lengthways and then each in 3 crossways to make 6 even filo stacks.

  • Step 3: Place a filo stack in each hole of the pie maker, allowing the filo to overhang the side and then spoon filling over filo base until level.

  • Step 4: Fold the overhanging pastry over the filling and brush the tops with butter.

  • Step 5: Turn on the pie maker and close the li and cook for 5 minutes and then turn over and cook for a further 5 minute and sprinkle with sesame seeds in the last minute of cooking, if using and then transfer to a tray and cover with foil to keep warm.

  • Step 6: While the gozlemes are cooking, place a remaining sheet of filo on a work surface and brush with butter and repeat process of layering with the 2 remaining sheets and butter and then fold filo in half and cut into 4 even filo stacks.

  • Step 7: Repeat cooking the remaining filo stacks and spinach mixture.

  • Step 8: Place yoghurt in a small bowl and place gozlemes on a serving dish with lemon wedges to serve.
