The ingredients are:
  • 4 pounds tomatoes
  • 2 onions (medium onions, chopped)
  • 3 apples, sliced (medium cooking apples, peeled cored)
  • 1 1/2 lemons, thinly sliced
  • 2 1/2 tablespoons, grated ginger root (fresh)
  • 2 cloves garlic, minced
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1 tablespoon mustard seed
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon cayenne
  • 3/4 cup white vinegar
  • 3/4 cup honey

How to Make

  • Step 1: Peel the tomatoes by blanching for 15 seconds in boiling water and then dipping into cold water.

  • Step 2: Cut out the stems.

  • Step 3: Mix together the tomatoes, onions, apples, lemons, ginger, garlic, sugar, salt, mustard seeds, cloves, cayenne, vinegar, and honey in a large saucepan

  • Step 4: Bring to a boil. Reduce heat and simmer, uncovered over a low heat for about 5 hours.

  • Step 5: Stir frequently.

  • Step 6: Pour into warm sterilized jars and cover with 2 layers of wax paper
