Ingredients

The ingredients are:
  • 3 tablespoons butter
  • 2 tablespoons garlic, minced
  • 1 tablespoon salt
  • 1 tablespoon dry oregano
  • 1/3 cups flour
  • 8 cups red onion (1/4 inch sliced thin)
  • 4 cups tomatoes, diced
  • 5 cups tomatoes, ground (pureed)
  • Salt and black pepper, to taste

How to Make

  • Step 1: Melt butter in large pot over medium heat. Add butter, garlic, salt and oregano to butter. Stir well. Saute until garlic is fragrant (about 1 minute).

  • Step 2: Add flour and stir in to mixture. Cook for five minutes on medium heat to thicken. Mixture will darken as it cooks. Stir often.

  • Step 3: Combine into roux slowly 2 1/4 cups of water and whisk until smooth.

  • Step 4: Add 4 1/2 cups water along with onions and tomatoes.

  • Step 5: Bring to a rolling boil and then lower heat to simmer for 15 minutes.

  • Step 6: Season to taste with salt and pepper
