Step 1: Cook and drain spinach (or broccoli), reserving liquid.
Step 2: Melt butter, add flour, and cook onion in it till soft.
Step 3: Add liquids slowly.
Step 4: Stir till thick.
Step 5: Add seasonings and cheese in pieces.
Step 6: When cheese is melted, stir in the spinach (or broccoli).
Step 7: Refrigerate and serve cold.
