  • 4 cups water,boiling
  • 1 tablespoons salt
  • Sauce:
  • 1 tablespoons butter
  • 1 tablespoons flour
  • 1 teaspoons annetto oil
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 green onions,minced
  • 1/4 cup cilantro,chopped
  • 4 eggs ,hardboiled,chopped
  • 1 jalapeno pepper,minced
  • 4 ounces cooked bacon ,crumbled

How to Make

  • Step 1: Put potatoes on to cook with the salt and onion in water cook until tender

  • Step 2: Meanwhile

  • Step 3: Heat butter and oil

  • Step 4: Add green onions

  • Step 5: Add flour cook until lightly browned

  • Step 6: Add milk cook until thickened add seasonings

  • Step 7: Add cream

  • Step 8: Add eggs and cilantro to taste

  • Step 9: Pour over drained boil potatoes

  • Step 10: Garnish with bacon and jalapeno
