Ingredients

The ingredients are:
  • 2 teaspoons oil
  • 1/2 yellow onion, diced (large onion)
  • 1/2 green pepper, diced (large pepper)
  • 1 pound ground turkey (lean or extra lean)
  • 2 packets (1.25 ounce) chili seasoning mix ( 1/3 cup homemade chili seasoning my recipe #23127)
  • 6 cups chicken stock (or broth, unsalted or very low sodium)
  • 1 can (15 ounce) black beans (undrained, or navy beans, undrained)
  • 1 tablespoon granulated sugar
  • 1 tablespoon lime juice
  • 1/4 cup chopped cilantro, fresh

How to Make

  • Step 1: In a large saucepan, heat oil on medium heat. Add onions and peppers and saute till softened.

  • Step 2: Add turkey and break up as it's cooking. Cook until turkey is no longer pink.

  • Step 3: Add chili seasoning and stir into meat mixture and let cook for a few minutes to let flavor bloom.

  • Step 4: Add in chicken stock, black beans with packed juice (it thickens it just a little), sugar and lime juice.

  • Step 5: Stir well. Bring to a boil, then lower temp to low. Let simmer for 30-45 minutes. Add most of the cilantro saving a little for garnish.

  • Step 6: Ladle into bowls and sprinkle with remaining cilantro. Enjoy.
