Step 1: In a large saucepan, heat oil on medium heat. Add onions and peppers and saute till softened.
Step 2: Add turkey and break up as it's cooking. Cook until turkey is no longer pink.
Step 3: Add chili seasoning and stir into meat mixture and let cook for a few minutes to let flavor bloom.
Step 4: Add in chicken stock, black beans with packed juice (it thickens it just a little), sugar and lime juice.
Step 5: Stir well. Bring to a boil, then lower temp to low. Let simmer for 30-45 minutes. Add most of the cilantro saving a little for garnish.
Step 6: Ladle into bowls and sprinkle with remaining cilantro. Enjoy.
