  • 1 can (16 ounces)hominy,drained
  • 6 eggs,beaten
  • ⅓ cup milk
  • 4 ounces queso fresco
  • 1/16 teaspoon salt
  • 1/16 teaspoon pepper
  • 1/16 teaspoon ground cumin
  • 1 tablespoons cilantro,minced
  • 1 tablespoons chives,minced

How to Make

  • Step 1: A large skillet,

  • Step 2: Heat the olive oil over medium heat.

  • Step 3: Add the onions, garlic, and annatto powder.

  • Step 4: Saute until the onions turn translucent.

  • Step 5: Add the hominy and stir to incorporate all the ingredients.

  • Step 6: Cook until golden

  • Step 7: Season with salt, ground pepper and ground cumin to taste.
