Ingredients

The ingredients are:
  • 1,5 kilograms sweet potatoes (6 X 250 grams each)
  • 1 tablespoon olive oil
  • 1/4 cup pizza sauce with garlic and herbs
  • 60 grams button mushrooms, thinly sliced
  • 1/2 green capsicum, finely chopped
  • 50 grams sliced pepperoni, cut into thin strips
  • 1/2 cup kalamata black olives, sliced and drained
  • 1 teaspoon oregano leaves, dried
  • 1 1/2 cups pizza cheese, grated

How to Make

  • Step 1: Place potatoes in a large roasting pan. and pick all over with a fork and brush with oil and season with salt and pepper.

  • Step 2: Cook in a hot oven (200C) for about 30 to 35 minutes, or until just tender when tested with the tip of a small, sharp knife.

  • Step 3: Remove and let stand in pan for 10 minutes.

  • Step 4: Using a sharp knife, cut each potato lengthways, about three-quarters through and squeeze sides to open.

  • Step 5: Spread pizza sauce evenly along slits; fill with mushrooms, capsicum, pepperoni and olives and sprinkle with oregano, then cheese.

  • Step 6: Return pan to same, hot oven for about 15 minutes, or until cheese is golden and serve
