Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 10 ounces yellow onion, chopped (or 1 yellow onion)
  • 5 ounces red bell pepper, chopped ( or 1 large red bell pepper)
  • 3 garlic cloves, chopped
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1/16 teaspoon red pepper flakes (a pinch)
  • 1 tablespoon salt
  • 1 pound ground turkey
  • 1.8 ounces yams, peeled and diced (or 2 yams--I weighed mine)
  • 2 cans (30 ounces) black beans (15 ounces each can), rinsed and drained
  • 1 can (28 ounces) crushed tomatoes
  • 28 ounces water
  • FOR SERVING
  • 1 1/2 tablespoons orange zest (optional)
  • Cilantro (optional)
  • Bacon bits(optional)

How to Make

  • Step 1: Put the olive oil in a large pot and heat on medium-high. Put in the chopped onions and the red bell pepper. Cook everything for 5 to 6 minutes, or until the onions are translucent.

  • Step 2: Mix in the chopped garlic, chili powder, cumin, red pepper flakes and the salt. Add in the ground turkey and cook for 7 to 8 more minutes, stirring occasionally, until the turkey is no longer pink.

  • Step 3: Mix in the yams, canned black beans, crushed tomatoes, and water. Cook 15 to 20 minutes longer, until everything starts to thicken up. Salt and pepper to taste.

  • Step 4: Serve this with the orange zest, cilantro, and bacon if you choose to.
