Step 1: Preheat oven to 375F.
Step 2: On a baking sheet, lightly toast pita bread in the oven (about 8-10 minutes). Allow to cool while you prep for the pizzas.
Step 3: In a medium bowl, place the chicken cubes. Mix cubes with 1 tablespoon pesto.
Step 4: Smear remaining 2 tablespoons pesto around the toasted pita bread. Begin assembling the pizza-add veggies, olives, cheese
Step 5: And then top with chicken.
Step 6: Place back into oven to melt cheese (about 3-4 minutes).
Step 7: Slice into 4 pieces and serve immediately.
