Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 1/4 pound leeks, sliced (about 2 large leeks)
  • 3/4 pound lamb (minced or ground)
  • 2 cups onions, diced
  • 7 ounces dry white rice
  • 3 cups lamb stock (beef or chicken may be used)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon pepper, or to taste

How to Make

  • Step 1: Heat oil and saute the leeks until they start to brown.

  • Step 2: Add the onions and meat and stir fry until everything is browned.

  • Step 3: Add the rice and stir together for a few minutes ensuring the rice is well blended.

  • Step 4: Add the stock, salt and pepper. Stir and bring to boil for 2 minutes.

  • Step 5: Pour the mixture into a large baking dish, place on the bottom self of a preheated oven at 350ºF

  • Step 6: Bake for 45 minutes - 1 hour. The dish is ready when all the liquid is evaporated and the rice is soft.

  • Step 7: Let sit for 10 minutes before serving.
