Ingredients

The ingredients are:
  • 1 pound beef round (or flank steak)
  • 2 teaspoons soy sauce
  • 1 teaspoon minced garlic or more
  • 12 ounces bell peppers (red or green bell pepper, in strips = 2 cups)
  • 16 ounces celery, cut diagonally (= 2 cups)
  • 2 ounces chopped green onions (= 2/3 cup)
  • 4 teaspoons oil (vegetable oil)
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground ginger
  • 14 ounces tomatoes (cut in wedges = 2 tomatoes)

How to Make

  • Step 1: Trim fat from steak and cut across grain in slices about 1"x¼".

  • Step 2: Add soy sauce and garlic. Stir and set aside.

  • Step 3: Prepare vegetables.

  • Step 4: Heat half of the oil until very hot in large skillet.

  • Step 5: Add vegetables and stir-fry 2 minutes.

  • Step 6: Remove from skillet to warm pan.

  • Step 7: Add remaining oil to skillet, heat.

  • Step 8: Add steak and stir-fry 2 minutes.

  • Step 9: Mix cornstarch with water, add to steak.

  • Step 10: Cook, stirring constantly until thickened.

  • Step 11: Add vegetables (add tomatoes last) and mix thoroughly.

  • Step 12: Serve over white or brown rice.
