Step 1: Put all ingredients EXCEPT FISH in a small bowl. Stir till well mixed.
Step 2: Pour sauce into a non-stick skillet. Lay fish fillets in the skillet. Cover.
Step 3: Turn heat on medium-low and simmer 15 minutes. Carefully turn fish over with 2 spatulas, because the fish may break apart.
Step 4: Simmer 15 more minutes. Watch to make sure the sauce doesn't boil away.
Step 5: Plate fish. Then bring sauce to a boil and reduce to a slightly thickened sauce. Pour over fish fillets.
