  • 1 quart nonfat yogurt (plain, reduced to 1 3/4 cup yogurt cheese (see recipe in this collection)
  • FOR SCANDINAVIAN DIP
  • 2 tablespoons chopped fresh dill
  • 3 tablespoons grated onion
  • 1 clove garlic, minced
  • Freshly ground black pepper, to taste
  • FOR HERB DIP
  • Freshly ground black pepper, to taste
  • 1 clove garlic, minced
  • 1 minced shallot
  • 1 teaspoon grated lemon zest
  • 3 to 4 tablespoons minced fresh herbs (tarragon, chervil, oregano, basil, parsley)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
