  • 2 cups cherry tomatoes (halved)
  • 1 cucumber, seeded and chopped (English cucumber)
  • 1 red bell pepper, chopped
  • 1 red onion, finely chopped (small onion)
  • 1/2 cup sliced black olives (optional)
  • 1 cup crumbled feta cheese
  • FOR DRESSING
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 1/3 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
