Step 1: In large pot or dutch oven melt butter and add green peppers cooking until tender.
Step 2: To the onion and green pepper mixture add the apples, brown sugar, caraway seeds, potatoes, and sauerkraut and mix well.
Step 3: Lay sausage pieces on top of sauerkraut mixture and cover with lid. Cook for 40 minutes over medium low heat and serve with hard crusty bread.
