Ingredients

The ingredients are:
  • 5 ounces chopped onion (= 1 cup)
  • 11 ounces diced carrots (= 2 cups)
  • 8 ounces chopped celery (= 1 cup)
  • 16 ounces spinach, cut up small (= 2 cups)
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 2 tablespoons parsley
  • ½ teaspoon thyme
  • 1 small garlic clove, minced
  • Salt to taste
  • 2-3 quarts water

How to Make

  • Step 1: Put vegetables in large pot and cover with 2-3 quarts of water..

  • Step 2: Bring to a boil, reduce heat and simmer 2 hours, stirring frequently.

  • Step 3: Add seasonings and simmer 1 hour longer.

  • Step 4: Strain.

  • Step 5: Add water to make 2 quarts.
