Ingredients

The ingredients are:
  • 2 eggs
  • 1/2 cup cream, single pouring cream (125 ml)
  • 2 cups walnuts, finely chopped (240 grams)
  • 120 grams brioche sliced bread (4 x 3cm slices)
  • Melted unsalted butter, for brushing
  • Nutmeg, grated to serve
  • Maple syrup, to serve

How to Make

  • Step 1: Place the eggs and cream in a small shallow tray and whisk to combine and spread the walnut on a separate tray.

  • Step 2: Dip the brioche into the egg mixture and allow to soak for 30 seconds and then press each slice into the walnuts.

  • Step 3: Heat a large non-stick frying pan over medium heat and brush with butter and cook the brioche, in 2 batches, for 3–4 minutes each side or until golden brown. Sprinkle with nutmeg and drizzle with maple to serve.
