Ingredients

The ingredients are:
  • 500 grams potato, skin on
  • 185 grams tuna, canned drained
  • 1 egg
  • 1/2 cup carrot, grated
  • 3/4 cup zucchini, grated
  • 1/2 cup cheddar cheese
  • 1/2 cup wholemeal plain flour
  • 3 tablespoons canola oil

How to Make

  • Step 1: Cut potatoes into quarters, put in a saucepan with cold salted water and bring to the boil and once soft, drain water and mash potatoes with the skin on.

  • Step 2: In a large mixing bowl add remaining ingredients except the oil.

  • Step 3: Add potato mash to tuna mixture, season with salt and pepper then fold ingredients together until well combined.

  • Step 4: Shape patties using your hands - using a quarter cup measurement for each patty.

  • Step 5: Heat a large frying pan; add oil and once heated, place the patties in the oil and fry until golden brown.

  • Step 6: Cook the patties in several batches for best results.
