Step 1: Heat oil in a large heavy pot over medium- high heat.
Step 2: Add bell peppers, jalapeno, onion, garlic, and saute until tender, about 6 minutes. Add cumin, paprika ,oregano, chili powders, and cayenne and continue to cook, another 5 minutes.
Step 3: Add pork and beef stew meat
Step 4: Crumble and cook beef and chorizo in a separate saute pan until browned, strain grease and add meat to cooked vegetables.
Step 5: Add Worcestershire, kitchen bouquet, hot sauce and tomato paste.
Step 6: Continue cooking until tomato paste turns nicely brown and caramelized, another 3 to 4 minutes.
Step 7: Add beef broth, beer ,tomatoes and bay leaves. Bring to a boil, then reduce heat to a simmer and cook, 1 hour.
Step 8: Season with salt and pepper, to taste.
