Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1/4 cup green bell pepper, diced
  • 1/4 cup red bell pepper, diced
  • 1 jalapeno,minced
  • 1 cup vidalia onion, diced
  • 3 cloves garlic,smashed
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon ancho chili powder
  • 1 pound pork loin,diced
  • 1 pound beef stew meat,diced
  • 1 pound ground beef
  • 8 ounces mexican chorizo
  • 1 teaspoon worcestershire sauce
  • 1 teaspoons kitchen bouquet
  • 1 teaspoon hot sauce
  • 1 can (6 ounces) tomato paste
  • 1 can (15 ounces) fire roasted tomatoes
  • 2 cups beef broth
  • 1 can (6 ounces )beer, can use whole can if you like
  • 2 bay leaves

How to Make

  • Step 1: Heat oil in a large heavy pot over medium- high heat.

  • Step 2: Add bell peppers, jalapeno, onion, garlic, and saute until tender, about 6 minutes. Add cumin, paprika ,oregano, chili powders, and cayenne and continue to cook, another 5 minutes.

  • Step 3: Add pork and beef stew meat

  • Step 4: Crumble and cook beef and chorizo in a separate saute pan until browned, strain grease and add meat to cooked vegetables.

  • Step 5: Add Worcestershire, kitchen bouquet, hot sauce and tomato paste.

  • Step 6: Continue cooking until tomato paste turns nicely brown and caramelized, another 3 to 4 minutes.

  • Step 7: Add beef broth, beer ,tomatoes and bay leaves. Bring to a boil, then reduce heat to a simmer and cook, 1 hour.

  • Step 8: Season with salt and pepper, to taste.
