Ingredients

The ingredients are:
  • 5 ounces bacon, diced,(5 strips)
  • 1 cup onion, chopped
  • 2 cups chicken broth
  • 1 pound potatoes, peeled and cubed,(4)
  • 1 teaspoons salt
  • 1/8 teaspoon pepper
  • 1/3 cup flour
  • 2 cups milk
  • 1 cup swiss cheese,shredded
  • 1 teaspoons dijon mustard, to taste
  • 1 tablespoons parsley,minced

How to Make

  • Step 1: Large saucepan

  • Step 2: Cook bacon until crisp

  • Step 3: Remove

  • Step 4: Drain pan , reserving 1 tablespoon drippings.

  • Step 5: Saute onion in drippings until tender. Add broth, potatoes, salt and pepper. Bring to a boil.

  • Step 6: Reduce heat; simmer, uncovered, for 12 minutes or until potatoes are tender.

  • Step 7: Combine flour and milk until smooth;

  • Step 8: Gradually stir in potato mixture.

  • Step 9: Bring to a boil

  • Step 10: Cook and stir for 2 minutes or until thickened and bubbly.

  • Step 11: Remove from the heat

  • Step 12: Stir in cheese and mustard until melted.

  • Step 13: Sprinkle with baconand parsley
