Ingredients

The ingredients are:
  • 1 1/2 pounds ground chicken
  • 1/2 cup fresh spinach, finely chopped
  • 1/2 cup roasted red bell pepper (rinsed and drained, finely chopped)
  • 2 teaspoons olive oil
  • 1 teaspoon dried sage
  • 3/4 teaspoon crushed red pepper flakes
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground coriander

How to Make

  • Step 1: Combine all ingredients; knead together until well combined.

  • Step 2: Shape into 16 1/2-inch patties. (you can make them larger for a full size bun, but cook a bit longer).

  • Step 3: Cook the patties in batches in a large nonstick skillet over medium heat for 3 minutes; turn patties and cook 3 more minutes or until done.

  • Step 4: Serve as a breakfast sausage or on a toasted slider bun with your choice of condiments. (I like mayo and butter lettuce).
