Ingredients

The ingredients are:
  • 9 tablespoons all-purpose flour
  • 2/3 cup sugar, divided
  • 2 teaspoons baking powder
  • ¼ teaspoon salt, divided
  • 1/2 cup skim milk
  • 16 ounces peaches, sliced (fresh, peeled= 2 cups)
  • 1/2 teaspoon cinnamon
  • 1/8 to 1/4 teaspoon lemon juice
  • 1/4 cup water

How to Make

  • Step 1: Sift together ½ cup (8 tablespoons) of flour, 1/3 cup of sugar, the baking powder, and 1/8 teaspoon of salt.

  • Step 2: Stir in the milk.

  • Step 3: Pour this batter into a well-greased small and rather deep baking dish, about 8"x8".

  • Step 4: Put peach slices in saucepan and add the other 1/3 cup of sugar, cinnamon, lemon juice, water, the remaining 1 tablespoon of flour, and the remaining 1/8 teaspoon of salt.

  • Step 5: Bring to a boil, being careful not to let it stick to the bottom (stir).

  • Step 6: Pour boiling fruit mixture over batter in baking dish.

  • Step 7: Cook uncovered at 350'F. for about 1 hour or until browned on top. The batter will rise to the top.

  • Step 8: Serve warm with cream or ice cream.
