Ingredients

The ingredients are:
  • 100 grams lettuce (baby salad leaf mix)
  • 1 tablespoon white wine vinegar
  • 1/4 teaspoon dijon mustard
  • 1/4 teaspoon mustard (seeded, optional)
  • Salt & pepper, to taste
  • 1 1/2 teaspoons sugar (raw sugar, 2 teaspoon honey may be used instead)
  • 50 ml oil (vegetable oil)
  • 180 grams oranges (mandarin oranges, de-seeded and segmented into single segments, 2 oranges)
  • 200 grams mango (1- 2 mango, peeled, diced for approx 2 cups)
  • 150 grams tomatoes (cherry tomatoes, halved, 1 cup )
  • 50 grams pomegranate seed ( 1/2 pomegranate)

How to Make

  • Step 1: Whisk the vinegar with mustard, salt, pepper and sugar, and whilst whisking drizzle in the oil until all ingredients are well combined ~ alternatively do this in a screw top jar and shake vigorously until combined.

  • Step 2: Mix together the salad leaves, mandarin, mango and tomato in a serving bowl and drizzle with the dressing and gently toss to combine.

  • Step 3: Sprinkle over pomegranate seeds and serve.
