Ingredients

The ingredients are:
  • 1 kilogram potatoes, grated(use a starchy potato)
  • 1 clove garlic, grated
  • 150 grams onion, grated ( 1 small onion)
  • 150 grams bacon, finely diced
  • 3 eggs, large
  • ¼ cup plain flour (a little more may be needed)
  • 1 teaspoon cayenne pepper
  • 1 tablespoon chives, chopped
  • 2 tablespoons olive oil (virgin, extra for frying (more maybe needed)
  • Salt and pepper to taste
  • SAUCE TO SERVE
  • 1 tablespoon chives, finely chopped
  • 1 tablespoon bunch dill, finely chopped
  • ½ cup sour cream
  • Pepper to garnish (optional)

How to Make

  • Step 1: Combine the grated potato, garlic and onion in a bowl squeezing out any excess liquid with your hands. Season the mix with salt and a little pepper and mix through the diced bacon.

  • Step 2: Using a separate bowl, whisk the eggs and flour together to form a thick batter. Pour into the potato mixture, add the cayenne pepper and chives and mix well until the mix is of a sticky consistency.

  • Step 3: Heat a few tablespoons of the olive oil in a large non-stick pan over medium heat and add spoonfuls of the potato mixture. Flatten with the back of a spoon and fry until crispy and golden on both sides.

  • Step 4: Drain cakes on paper towel.

  • Step 5: "To make the sauce"; Mix together the herbs and sour cream in a small bowl, stirring well in a bowl and serve alongside the hot potato pancakes. Grind just a little pepper for garnish if using.
