Ingredients

The ingredients are:
  • FOR THE CRUST
  • 1/2 cup graham cracker crumbs
  • 1/3 cup all purpose flour
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons firmly packed brown sugar
  • FOR THE FILLING
  • 6 1/2 ounces marshmallows (3 1/4 cups)
  • 1/4 cup milk
  • 2 tablespoons sugar
  • 2 teaspoons instant coffee granules
  • 2 tablespoons bourbon (or whiskey)
  • 1 1/2 cups heavy whipping cream (whipped)
  • FOR THE GARNISH
  • Heavy whipping cream, sweetened, whipped, if desired
  • Chocolate covered espresso beans, if desired

How to Make

  • Step 1: Preheat the oven to 350 degrees Fahrenheit.

  • Step 2: Get out a medium bowl and combine all the crust ingredients together.

  • Step 3: Press into a 9 inch pie pan. ( Keep in mind that it doesn't need to go to the very top of the pan, anyway.)

  • Step 4: Place into the oven for 7 to 10 minutes or until lightly browned and then let it cool.

  • Step 5: In a 2 quart saucepan, combine the marshmallows, milk, sugar, and coffee granules; cooking on low and stirring constantly. Cook until the marshmallows are completely melted. Pour this mixture into a large bowl and let it cool.

  • Step 6: Next, pour the 2 tablespoons of bourbon or whiskey into the marshmallow mixture.

  • Step 7: Whip the heavy whipping cream, then fold it into the same mixture. Pour this into the cooled graham cracker crust and place the pie into the refrigerator for at least 4 hours until it's set.
