Step 1: Preheat oven to 350F.
Step 2: Combine in a food processor the flours, Italian seasoning, baking soda and cream of tartar, yeast, ground flax meal and salt.
Step 3: Pulse several times to combine. Add the eggs and the apple cider vinegar and pulse several times to bind dough into a mass. Add 1 teaspoon water at a time as needed if dough is too dry.
Step 4: Scrape the dough onto a sheet of plastic wrap and knead to form a smooth ball.
Step 5: Using the vegetable oil, grease an 8x8 inch or 9x9 inch pan.
Step 6: Transfer dough to a sheet of parchment paper and top with a second sheet. Roll dough out to size of pan.
Step 7: Remove top sheet of parchment paper and discard. Being very careful, flip the dough into the pan from the parchment paper.
Step 8: Pinch the edges to create an edge if you wish.
Step 9: Place in hot oven and bake until golden (10-12 minutes).
Step 10: Load it up with your choice of toppings and place back into the oven. Bake until cheese is bubbly (about 5-10 minutes).
Step 11: Optional: Allow crust to cool. Wrap in plastic wrap and freeze for up to one month. When ready to eat, place on baking sheet and return to a preheated 350F oven for 10 minutes. Add your toppings and bake until cheese is bubbly (about 5-10 minutes).
