Ingredients

The ingredients are:
  • 6 ounces cauliflower, riced (cauliflower rice)
  • 1 teaspoon olive oil
  • 3 ounces cream cheese
  • 1 1/2 teaspoon apple cider vinegar
  • 4 ounces smoked salmon
  • 1 teaspoon Asian garlic chili sauce
  • 15 grams cucumber, cut into thin strips (English cucumber)
  • 50 grams avocado (1/4 of an avocado, cut into thin strips)
  • 5.2 grams nori sheets (2 sheets)
  • 2 tablespoons tamari sauce (to serve with)

How to Make

  • Step 1: Drizzle the oil in a non-stick skillet and bring to medium heat, add the cauliflower rice and cook until just a la dente.

  • Step 2: Remove from heat and allow to cool completely.

  • Step 3: Melt the cream cheese in a microwave for 10 to 15 seconds, until softened.

  • Step 4: Mix the cauliflower rice with the melted cream cheese and apple cider vinegar until well blended; set aside.

  • Step 5: Place a layer of plastic wrap over a bamboo rolling sushi mat,top with a nori sheet.

  • Step 6: Spread half the cauliflower rice mixture over bottom half part of the nori sheet(The end closest to you)

  • Step 7: Top this with the cooked salmon, placing it evenly and horizontally over the cauliflower rice mixture.

  • Step 8: Add half the chili sauce, dropping it in a few different spots over salmon.

  • Step 9: Layer the avocado and cucumber alongside the salmon.

  • Step 10: Using the plastic wrap, carefully roll the sushi, keeping it as snug as you can to get a nice roll.

  • Step 11: Unwrap the sushi roll and slice into bite size pieces.

  • Step 12: Repeat for next roll.

  • Step 13: Serve with tamari sauce.

  • Step 14: Enjoy!
