Step 1: Heat an oiled, large grill plate over a medium to high heat and add chicken and cook turning occasionally for about 10 minutes or until cooked through and then remove chicken from skewers and place in a large bowl.
Step 2: Stir in peanuts, coriander and juice and season with salt and pepper and mix well to combine.
Step 3: Serve chicken in lettuce leaves and top with carrot and onions and drizzle with chilli sauce.
