Ingredients

The ingredients are:
  • 1 kilogram chicken breast (12 Honey Soy Marinated Chicken Skewers specified)
  • 1/3 cup peanuts, roasted salted and chopped
  • 1/3 cup coriander leaves, fresh and finely chopped
  • 2 tablespoons lemon juice
  • 8 butter lettuce leaves
  • 1 cup carrot, shredded
  • 3 spring onions, thinly sliced
  • Sweet chilli sauce, to serve

How to Make

  • Step 1: Heat an oiled, large grill plate over a medium to high heat and add chicken and cook turning occasionally for about 10 minutes or until cooked through and then remove chicken from skewers and place in a large bowl.

  • Step 2: Stir in peanuts, coriander and juice and season with salt and pepper and mix well to combine.

  • Step 3: Serve chicken in lettuce leaves and top with carrot and onions and drizzle with chilli sauce.
