Ingredients

The ingredients are:
  • 4 (12 ounces) boneless skinless chicken breasts (cubed)
  • 1/4 cup water
  • 1/2 cup orange juice
  • 1/4 cup light brown sugar
  • 1/3 cup light soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon lemon juice
  • 2 cloves garlic minced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons cornstarch
  • 4 tablespoons water (may use slightly less)
  • Sliced green onions (garnish)

How to Make

  • Step 1: Transfer the chopped chicken to the bowl of the instant pot.

  • Step 2: In a bowl, mix all remaining ingredients up to and including the red pepper flakes. Transfer mixture to the bowl of the instant pot.

  • Step 3: Close the lid and pressure cook for 5 minutes.

  • Step 4: Release the pressure manually and press the saute button.

  • Step 5: While the saute process is starting, mix water and cornstarch together in a small bowl.

  • Step 6: Add the cornstarch slurry to the chicken and stir into chicken mixture until incorporated completely.

  • Step 7: Cook until sauce thickens (1-2 minutes).

  • Step 8: Remove from pot and serve.

  • Step 9: Serve over cooked white rice and garnish with green onions.
