Ingredients

The ingredients are:
  • 650 grams apples ( granny smith apples, peeled, cored and cut into large chunks, about 450 to 500gms of cut apples)
  • 125 grams self-raising flour
  • 100 grams light brown sugar
  • 100 grams melted butter
  • 1 large egg
  • 200 milliliters milk (full cream)
  • 1 teaspoon ground cinnamon
  • 1 teaspoons lemon rind, finely grated
  • 150 ml water, hot (for topping)
  • 2 tablespoons honey (for topping)
  • 100 grams light brown brown sugar(for topping)
  • 2 tablespoons brown sugar (extra for finishing, more or less may be needed)
  • Thick cream or ice-cream to serve (optional)

How to Make

  • Step 1: You will need a high-sided baking tray, or glass dish approx 20cm by 30cms. (8 x 12 inches approx)

  • Step 2: Preheat the oven to 180c (160c for a fan-forced oven).

  • Step 3: Put the apple chunks in the bottom of the baking dish, you will need to have enough apple to make one good layer.

  • Step 4: Using a hand; whisk together the melted butter, egg, milk , lemon rind and cinnamon, when well mixed; add the flour and brown sugar whisking until you have a runny batter.

  • Step 5: Very gently pour the batter gently over the fruit.

  • Step 6: Mix together the topping ingredients gently spoon/pour all over the batter and apple, finally sprinkling some extra brown sugar over the top.

  • Step 7: Place pudding i the oven and bake approx; 45- 50 minutes, (until skewer comes out clean from pudding part) - where the sides will be bubbling and the top will be a crispy and brown in colour.

  • Step 8: Serve pudding warm and serve with thick cream or ice-cream.
