Ingredients

The ingredients are:
  • 3 cups cooked rice (white or brown rice = 1 cup raw rice)
  • 1 egg white
  • 1 whole egg (lightly beaten)
  • 8 ounces low-fat mozzarella cheese (grated, divided)
  • 1 cup tomato sauce (= 1 8-ounce can)
  • ½ teaspoon basil
  • ½ teaspoon oregano, crushed
  • 1 clove garlic, minced (optional)
  • 2 tablespoons grated Parmesan cheese (fresh)
  • 1 cup mushrooms, sliced (optional)
  • ½ cup onions, sliced or diced (optional)
  • 3/4 cup bell peppers, sliced or diced (optional)
  • 3.3 ounces cooked turkey meat (diced, =3/4 cup, optional)
  • 8.6 ounces shrimp (chopped, =3/4 cup, optional)

How to Make

  • Step 1: In medium bowl combine the rice, the beaten egg white and whole egg, and 1 cup of mozzarella.

  • Step 2: Spread mixture evenly on bottom and sides of greased 12"-13" pizza pan or two 9" pie plates, pressing firmly to form a crust.

  • Step 3: Bake crust in preheated 450' F. oven for 20 minutes.

  • Step 4: In small bowl combine tomato sauce, garlic, basil, and oregano.

  • Step 5: Spread this sauce evenly over baked crust.

  • Step 6: Add your choice of toppings.

  • Step 7: Sprinkle pizza with remaining cup of mozzarella and the Parmesan.

  • Step 8: Return pizza to oven for 10 minutes more.
