  • 3 pounds zucchini, unpeeled, cut in 1-inch pieces
  • 1 cup low-fat cottage cheese
  • 1 cup Monterey Jack cheese, shredded (about 3-4 ounces)
  • 2 eggs, beaten
  • 1 teaspoon dill seed
  • ¼ teaspoon salt
  • ½ cup bread crumbs (dry)
  • 1 tablespoon butter, cut up

How to Make

  • Step 1: Simmer zucchini pieces in enough salted water to cover, for 5 minutes.

  • Step 2: Drain very well.

  • Step 3: In a large casserole dish, combine zucchini with cottage cheese, Monterey Jack, eggs, dill seed, and salt.

  • Step 4: Bake uncovered in a preheated 350' F. oven for 15 minutes.

  • Step 5: Sprinkle bread crumbs on top of zucchini mixture and dot with butter.

  • Step 6: Bake 15 minutes more.
