Step 1: For the mash, peel and roughly chop the swede and boil in water until soft when tested with the point of a knife.
Step 2: Preheat the grill/broiler to a high heat.
Step 3: Massage the lamb all over with the mustard.
Step 4: On a plate combine the breadcrumbs, parmesan and thyme.
Step 5: Take the steak and roll in the breadcrumb mix so that it is evenly covered.
Step 6: Grill/broil the steak for six minutes on each side or until done to your liking.
Step 7: Drain the swede, mash with the butter and season and serve both together.
