  • 3 cups water
  • 1 1/2 teaspoons oil (vegetable oil)
  • 8 ounces chopped onion (1 cup)
  • 1 tablespoon curry powder
  • 3/4 teaspoon ground ginger
  • 3 tablespoons seedless raisins
  • ¼ teaspoon salt or less
  • 3 cups cooked rice (boiled)
  • FOR SUGGESTED GARNISHES
  • 3/4 cup chutney
  • 1 egg (diced hard-boiled)
  • ½ cup olives, chopped
  • ¼ cup shredded coconut
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground cumin

How to Make

  • Step 1: Wash peas, add water, bring to boil. Cover, then remove from heat and let stand 1 hour.

  • Step 2: Heat oil in saucepan. Add onions and sauté until limp.

  • Step 3: Add spices and raisins. Stir to blend.

  • Step 4: Add green peas and water as needed to cover. Stir.

  • Step 5: Bring to boil. Cover and simmer 1 hour.

  • Step 6: Serve over rice, with or without suggested garnishes.
