Step 1: Wash peas, add water, bring to boil. Cover, then remove from heat and let stand 1 hour.
Step 2: Heat oil in saucepan. Add onions and sauté until limp.
Step 3: Add spices and raisins. Stir to blend.
Step 4: Add green peas and water as needed to cover. Stir.
Step 5: Bring to boil. Cover and simmer 1 hour.
Step 6: Serve over rice, with or without suggested garnishes.
