  • 1 unbaked (4.5-ounce) pie pastry (pastry shell, = 9 or 10 inch pie crust)
  • 10 ounces frozen spinach (cut)
  • 8 ounces Swiss cheese, diced
  • 2 tablespoons all-purpose flour
  • 1 cup nonfat milk
  • 3 medium eggs, beaten
  • ½ teaspoon salt
  • 1/8 teaspoon black pepper
  • Nutmeg, pinch of

How to Make

  • Step 1: Prick pie shell with a fork and partially bake at 425' F. 6-8 minutes or according to package instructions. Set aside.

  • Step 2: Cook spinach, drain well and cool. Draining well is important.

  • Step 3: Dust cheese bits with flour by putting both in a bag and shaking. Set aside.

  • Step 4: Combine eggs, milk, and seasonings. Mix well.

  • Step 5: Stir in spinach and cheese.

  • Step 6: Pour into shell.

  • Step 7: Reduce oven to 350' F., bake 50-60 minutes.

  • Step 8: Cool slightly before slicing and serving.
