Step 1: In a large bowl sift the flour and then stir in the sugar and salt; make a well of the dry ingredients. Pour the yeast in the well and then add the milk; stir to combine. Cover with a dish towel or plastic wrap and let stand for 10 minutes or until the yeast starts foaming.
Step 2: Stir in egg and butter and then knead the dough (you may need to add more milk); cover with a dampened dish towel or plastic ic wrap and let rise for about 1 hour.
Step 3: Shape dough into 20 balls; cover with the damp towel and let stand for 15 minutes or until doubled.
Step 4: To make the filling: in a saucepan over medium heat add the butter and cinnamon and simmer for 10 minutes. Remove from heat and let cool to lukewarm ----DO NOT BOIL AGAIN. It is best to place in a double boiler to prevent boiling.
Step 5: Heat a round waffle iron to the highest temperature available -- if it is not non-stick great it before making the waffles. Put a dough ball on the waffle iron, press lightly and cook for 1 minute.
Step 6: Remove the waffle from the waffle iron with a knife and place on a board and immediately slice in half horizontally with a sharp serrated knife.
Step 7: Spread the inside with a little of the filing and then put the two half together.
Step 8: Repeat with rest of the dough balls and filling.
Step 9: Will keep for 2 weeks in an airtight container.
