Ingredients

The ingredients are:
  • 750 grams sweet potato wedges, frozen
  • 115 grams white corn tortillas, cut into strips (1/2 a 230 grams packet was specified)
  • 200 grams taco sauce, mild
  • 125 grams corn kernels, drained
  • 400 grams black beans, drained and rinsed
  • 1 1/2 cups mozzarella cheese blend, grated (grated pizza blend specified)
  • Chopped avocado, to serve

How to Make

  • Step 1: Spread the sweet potato chips over an oiled, large oven tray.

  • Step 2: Cook in a hot oven (200C), turning halfway, for about 20 to 25 minutes, or until crisp.

  • Step 3: Remove tray from oven and transfer chips to a large oven-proof dish and carefully toss tortilla strips through chips.

  • Step 4: Drizzle sauce over chip mixture and sprinkle with corn, black beans and cheese and return to the oven and cook for a further 10 to 15 minutes, or until cheese is melted.

  • Step 5: Serve nachos with avocado.
