  • 1 cup cornmeal
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons chopped green chilies--optional
  • 1 cup buttermilk
  • 1 egg
  • 1 tablespoon vegetable oil (or 1 teaspoon bacon drippings)

How to Make

  • Step 1: Combine dry ingredients in a bowl.

  • Step 2: Add milk and egg. Stir until blended and set aside 30 minutes to soften corn meal.

  • Step 3: Place shortening in 8-inch ovenproof skillet (preferably iron) or cake pan and heat it to 425' in oven.

  • Step 4: When sizzling, add to batter, add the chilies, stir, and pour all of it at once into skillet.

  • Step 5: Bake 20-25 minutes at 425' F.
