Ingredients

The ingredients are:
  • 1 yellow onion (diced small)
  • 1 bell pepper (diced small)
  • 2 ounces coconut oil (2 tablespoons)
  • FOR MEATBALLS
  • 2 1/2 pounds ground pork
  • 1 tablespoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried ground ginger
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 3 tablespoons water
  • 1 tablespoon ground flax seed
  • FOR SAUCE
  • 2 cups water
  • 2 1/2 tablespoons cornstarch
  • 1/2 cup Reduced-Sugar Tomato Ketchup (Heinz)
  • 2 tablespoons orange marmalade (Smuckers Splenda Sugar Free Orange Marmalade)
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh grated ginger
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon hot pepper flakes (optional for heat)

How to Make

  • Step 1: In a small bowl mix together the 3 tablespoons water and ground flax seeds; set aside and let sit for 15 minutes.

  • Step 2: Mix together the ground pork, onion powder, garlic powder, ground ginger, salt, pepper and flax seed and water mixture.

  • Step 3: Form into 1 inch meatballs and place on a rimmed baking sheet.

  • Step 4: Place in a preheated 350 degree Fahrenheit oven and cook for 15 minutes.

  • Step 5: In the meantime, melt the coconut oil in a skillet over medium-high heat, add onion and bell pepper and cook until they start to slightly brown on the edges.

  • Step 6: Remove the meatballs from the oven and place in a 14 inch X 10 inch casserole dish; pour the cooked onion and pepper over the meatballs and set aside.

  • Step 7: Whisk together the water and corn starch; stir in the remaining sauce ingredients and pour over the meatballs, onion and pepper.Cover and cook in a 350 degree Fahrenheit oven for 45 minutes; remove cover and cook for another 15 minutes.
