  • 4 ounces bean sprouts (cleaned and drained)
  • 1 teaspoon oil (cooking oil)
  • 1 tablespoon oil (cooking oil)
  • Ginger root, minced (1 slice)
  • 6 chopped green onions
  • 1 stalk very thinly sliced celery
  • 1 pound shrimp (shredded cooked shrimp or other fish or finely diced cooked meat)
  • 6 eggs (well-beaten)
  • 1 teaspoon salt
  • ΒΌ teaspoon freshly ground black pepper
  • Soy sauce, to taste

How to Make

  • Step 1: Combine the eggs, salt and pepper and have them ready to mix with the other ingredients.

  • Step 2: Heat small amount of oil in skillet and stir-fry the ginger root, onions, celery, and shrimp until translucent and crisp.

  • Step 3: Add the egg mixture.

  • Step 4: Heat the additional tablespoon of oil in another small skillet.

  • Step 5: Drop the mixture into it to form small omelets, golden brown on both sides.

  • Step 6: Serve with soy sauce.
