  • 150 grams coconut (1 cup coconut flesh, 1 young coconut will get you 1 cup flesh)
  • 2 mango (peeled and flesh scooped out)
  • 1/4 cup spearmint leaves
  • 2 teaspoons lime juice
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon chilli flakes
  • 1/2 teaspoon lime rind, finely grated
  • Sea salt flakes, to serve
