Ingredients

The ingredients are:
  • 4 tablespoons butter
  • 10 ounces orzo pasta,(1 cup)
  • 28 ounces vegetable broth
  • 8 ounces fresh asparagus, woody ends snapped off
  • 4 ounces mushrooms,sliced
  • 2 cups water,may need to be added to finish cooking pasta
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

How to Make

  • Step 1: In a large skillet

  • Step 2: Melt butter

  • Step 3: Add asparagus

  • Step 4: Add mushrooms

  • Step 5: And cook until tender

  • Step 6: Take out ,may need to add more butter

  • Step 7: Add orzo

  • Step 8: Toss to coat.

  • Step 9: Cook, stirring frequently over medium-high heat until at least half of the orzo is lightly browned.

  • Step 10: Add 14 oz. broth

  • Step 11: Reduce heat to low; cover; cook.

  • Step 12: Stir every couple of minutes,

  • Step 13: When liquid is mostly absorbed, add the remaining broth

  • Step 14: , stirring every couple of minutes.

  • Step 15: If more liquid is needed, add water, 1/2 c. at a time, covering and simmering until pasta is cooked to preferred tenderness.

  • Step 16: When pasta is done, toss in asparagus and mushrooms

  • Step 17: Season
